    Wash and dry produce. Trim and thinly slice scallions , separating whites from greens. Peel and mince or grate garlic .

    Fold a drizzle of oil into a large pot and heat over medium-high. Add ground pork and the reserved scallion whites; season with salt and pepper. Cook, breaking up meat into pieces, until browned ⏱️ 2 minutes (the pork will finish cooking in Step 3).

    To the pot with pork mixture, add chicken stock concentrate , pork ramen stock concentrate , soy sauce (half the soy sauce ~ for 4 servings), and ⏱️ 3½ cups water (7 cups and all the soy sauce for 4 servings); cover and bring to a simmer. Meanwhile, in a small bowl , combine sesame seeds , garlic, half the sesame oil (all for 4 servings), a drizzle of oil, a big pinch of salt, and as much chili flakes as you like. Cover with plastic wrap and microwave until fragrant ⏱️ 30 seconds .

    Once broth begins to simmer, reduce heat to medium. Add ramen noodles , bok choy and napa cabbage , and spinach ; simmer, stirring occasionally, until noodles are tender and pork is cooked through ⏱️ 2 minutes . Season with salt and pepper to taste.

    Divide ramen between large soup bowls. Stir in as much of the prepared chili‑garlic oil as you like. Top with the remaining scallion greens and a few crispy fried onions . Serve, adding the crispy onions fresh to the bowl to keep them crispy.
